My first memory of Christmas cake was when visiting granny and grandad around this time of year. The drive always seemed to take ages, 16 miles is a long way when your a kid, especially when there's cake waiting at the other end, and grandad always made a Christmas cake. Rich with fruit, heavy with brandy, layered with marzipan, thick icing and decorated to perfection. It was the sort of cake that would keep you warm through the coldest of winters.
Although I haven't had a decent bit of Christmas cake in a long time, this year I thought, I'd do something a bit different and try Detroit style dessert pizza. Sounds crazy I know, but I've been testing dessert pizzas with some good results.
Imagine a soft pizza base with a layer of custard, homemade apple compote and a crumble top or a soft base with nutty chocolate spread, chopped peanut chocolate bars with marshmallows, crushed biscuit and drizzled with even more chocolate, sounds good right, it was even better tasting them.
I'm yet to try out a Christmas cake pizza, I don't want to ruin the memory of Grandads amazing cake, but if I did, I think he’d have been quietly impressed.
